She Put De Lime into De Coconut


Oh yes, she put de lime into de coconut.......

After my last post of rainy days and Macaroons, this weekend has been glorious with warm sunshine just as summer should be. Sipping ice cold drinks on the patio and basking in the rays of the sun for a short while before venturing inside to watch a little television. Delia Smith’s Summer Collection was airing on UKTV Food channel yesterday and I watched again avidly as she made her “Coconut & Lime Cake”. I kept promising myself I would bake this and never got around to it. Being yet again another glorious day today, I thought I’d bring a little of the tropics into my kitchen with Delia’s Coconut and Lime cake. I must have had this recipe bookmarked for over ten years to bake since this cake first came to my attention!




Making the sponge was a simple affair of an all in one method, nothing could be simpler than this with a little bit of added baking powder for the rise of the sponge and it worked out perfectly. The sponge has a really lovely soft crumb base to my surprise with it being an all –in-one method. For the icing it called for segmenting the lime slices and collecting all the juice to add to the sifted icing sugar. The lime cuts through the sweetness of the icing perfectly to balance it out with a slight sucking in of cheeks of mouth-watering citrus flavour, sheer divineness of you adore citrus flavours! GORGEOUS!! There used to be a bakery near where I live that had cookies that looked like this cake but in cookie form. But this looks like something that could revive my memories in a delicious way!!
