Swiss Carrot Cake



It’s been birthday time again and this time it was my daughters. I had visions of baking a three-tier sponge parcel cake covered in different coloured fondant icing with hearts and stars springing out on wires from the top parcel. Then with a little pierce of a pin or should I say words, my bubble of dreams burst!! My daughter didn’t inherit my sweet tooth and announced that she would really appreciate a carrot cake that I had baked once before. I have to admit it is a gorgeous moist flavoured cake with cinnamon, freshly ground almonds, slight touch of lemon juice and zest, and moist freshly grated carrots not to mention the rest of the ingredients. The icing contains kirsch liqueur, which gives that special highlight in flavour and lightly toasted flaked almonds for the grand finale.

I cannot take credit for this recipe of “ Swiss Carrot Cake”, because it comes from Sonja Watson who submitted this recipe to “The Peoples Cookbook” UKTV Food. I gather this cake is from her mother’s recipe. The only adaptations I have made to this recipe are the temperature for baking was dropped to 160°C due to having a fan assisted oven, I doubled the quantity of toasted flaked almonds made a little extra kirsch icing for covering the cake.

Hi Rosie, This cake looks terrific. Sometimes it's nice to have a cake that is a little more subtle on the sweetness factor - and besides, it contains veges - all that great beta carotene and vitamin C ;)
