Lemon Meringue Pie

I think this has to be one of my favourite desserts of all time. As a child I would always request this for dessert when I had a choice. My aunt always used to treat me to one of her homemade versions when I went to visit. Sadly I never required her recipe to follow in her footsteps. I’ve been on a mission here to try and find a decent lemon meringue pie recipe to be on par with my childhood memories (!)

As you will have guessed, I have been trying out many recipes to find the perfect balance, a crisp base with a reputable hint of lemon filling and a gorgeous meringue topping.

The recipe I’m tending to favour at the moment is Tamasin Day-Lewis’s. The pastry base is very crisp just what I find is needed for this pie. The lemon filling has a glorious tangy richness of homemade lemon curd filling not to sweet to balance perfectly with the sugary meringue topping.

Perhaps my search is over but I don’t ever rule out other new recipes that may come my way. I must stress if you have a fondness for this dessert please do try this recipe out and I’m sure you’ll not be disappointed.

thats funny, my mum & I have also been trying to find the perfect meringue too, will try this one out & see how it goes
