Cheese & Chive Scones


It’s Bank Holiday here in the England and it’s really lovely to enjoy time with my family! Due to spending time cooking and baking over this weekend and kicking off those shoes of mine at some point with feet-up, I am for the first time trying out scheduled posting – I do hope this works and if you’re reading this I must have got it right *smile*.



A few days ago I thought I’d bake some simple savoury cheese scones adding a few chives that I freshly cut from my garden. They went down a storm in my household, being put into lunch boxes and even a few being shared out with hubby’s colleagues at work!

Scones are such a simple bake and made in no time – a great standby to have at hand with unexpected mouths to feed, they freeze perfectly well too!



Cheese & Chive Scones

Makes at least 12 scones

Ingredients
500g (1lb 2oz) self-raising flour
2 tsp baking powder
100g (4 oz) butter, chopped into small squares
2 tsp English mustard powder
225g (8 oz) grated strong Cheddar cheese
2 tsp chopped chives
2 eggs, beaten
150ml (¼ pint) of milk
For The Topping
A little extra milk for brushing the tops
50g (2 oz) grated Cheddar cheese for the topping

You will need 2 baking trays lined with non-stick baking paper

Method

Preheat the oven to 220°C/fan 200°C/425°F/Gas mark 7.
Sift the flour, baking powder and mustard together and place in a large bowl. Add the butter and rub in with finger tips until it resembles fine breadcrumbs.

Now add the 225g (8 oz) grated strong Cheddar cheese and stir around gently to mix in. Next add the eggs and enough milk to form a pliable dough.

Turn out onto a lightly floured surface and roll out the dough to 1cm (½ in) thickness and cut out with a 5cm 92 in) cutter. Re-roll the scraps of dough and cut out again until all the dough is used up. Place onto the lined baking trays and brush the tops lightly with a little milk and sprinkle over a small amount of grated cheese on top. Place in the preheated oven for approximately 10 – 15 minutes or until golden brown.

Serve sliced open with butter and more cheese and perhaps a little pickle too.

Enjoy your holiday! It's a holiday for us too since my kiddo has already come down with his first fever of the school year and will miss school today. I'll have to bake something to make him feel better, huh?
